Fish and Vegetable Tacos

Tacos are a well-known Tex-Mex street food. They are usually made with refried beans, ground beef, and lots of cheese, sour cream, and guacamole. This lighter version is delicious, with delicate fish and fresh vegetables served in a soft whole-wheat tortilla instead of a fried taco shell.

1 pound white fish fillets, such as sole or cod (see Tip)

2 teaspoons olive oil

3 tablespoons freshly squeezed lemon juice, divided

1½ cups chopped red cabbage

1 large carrot, grated

½ cup low-sodium salsa

⅓ cup low-fat Greek yogurt

4 soft low-sodium whole-wheat tortillas

1 Brush the fish with the olive oil and sprinkle with 1 ­tablespoon of lemon juice. Air-fry in the air fryer basket for 9 to 12 minutes, or until the fish just flakes when tested with a fork.

2 Meanwhile, in a medium bowl, stir together the remaining 2 tablespoons of lemon juice, the red cabbage, carrot, salsa, and yogurt.

3 When the fish is cooked, remove it from the air fryer basket and break it up into large pieces.

4 Offer the fish, tortillas, and the cabbage mixture, and let each person assemble a taco.
